my mom makes this really easy tortilla soup and when i learned how easy it was, i had to try it out. i made it for g one time (it might have been one of the first things i ever cooked for him) and he loved it (which is saying something, since i don’t cook often…). it’s only a little bit spicy, but it’s so rich with flavours. it’s best served with a homemade guacamole or salsa, but store bought is great if you’re short on time or whatever.
recipe: tortilla soup
serves 4 people
2 chicken breasts, diced and lightly seasoned with pepper
1 can yellow corn (or a handful of frozen corn)
1 can chili-ready tomatoes – or a few fresh, diced tomatoes tossed with chili seasoning
2 cans chicken broth
1 can refried beans
1 can black beans
sautee the chicken in a deep saucepan. once mostly cooked (just a few minutes), add the remainder of the ingredients and let it simmer for as long as you want, stirring occasionally. (see, i told you it was easy!!)
i love to top it with guac and salsa and serve it with tortilla chips and cheese… but it’s up to you. think of it as a liquid taco and garnish it however you garnish a taco.

Spread on baking sheet and toss with some oil and kosher salt.
Bake at 425, tossing occasionally, until golden brown and crispy. Yummy!
