this is a variation on a dish i’ve had at several restaurants. i particularly like the creaminess of the goat cheese with the spinach.
recipe: pan-seared chicken with goat cheese and spinach salad
one chicken breast per person
several slices of pepperoni per chicken breast
one ounce goat cheese per person
handful of peppadews
roasted red peppers (i make mine homemade – takes ten minutes)
bag of fresh spinach
pan sear your chicken breasts in some olive oil. place the pepperoni on top of each chicken breast and let them soften. set the chicken aside and pour the bag of spinach into the pan with the juices. saute the spinach until soft. you can saute the peppers too, if you want.
to plate, put spinach on the bottom, add the peppadews and roasted red peppers, then the chicken. top with the goat cheese.
