this is no ordinary grilled cheese sandwich. this is a grilled cheese + chicken + bacon + tomato sandwich but that was kind of long to put in the title…
it’s best when served with a tomato bisque, but it’s so big and yummy that it’s fine on it’s own too.
recipe: grilled cheese + chicken + bacon + tomato sandwich
1 chicken breast
3 slices of bacon
sliced tomato
cheese! i use a mixture of cheddar, pepper jack, italian and mexican. really, you can use whatever kind you want!
texas toast – or similar – bread
a little bit of butter
sautee the chicken and bacon in a frying pan. the grease from the bacon should work as a natural oil for the chicken to cook in. toast the bread either in another pan or in a toaster oven — if you use a toaster oven, you can put the cheese on there as well and let it start to melt together. i love to put it on both slices of bread so it holds the bacon and chicken on there. add the bacon to one of the slices of bread and put the tomatoes on the other. when the chicken is done, cut into strips and lay across the bread. put the sandwich together and spread butter across the top slice. put it back into the frying pan buttered side down (to get a little crispness on the bread), put butter on the other slice and flip it.
put on a plate, slice the sandwich diagonally (sandwiches are better when cut diagonally) and serve. it should be a thick, cheesy sandwich!
