this is one of my all-time fav dishes. i was first introduced to it in greece, when my aunt cooked lunch for us the day i left town to return to glasgow. i should have known it was incredibly easy to make, and i have made it countless times since then. it’s a great meal to make and stick in the fridge for leftovers… which i do a lot!
recipe: shrimp and feta pasta
shrimp. depending on the number of people… i like a lot of shrimp, so usually a half a bag is good.
15-20 sundried or sun blush tomatoes (i can’t find sun blush tomatoes here, but if you can, those are best)
handful of kalamata olives
feta cheese (again dependent on the amount of people — half a block or so)
spaghetti for the number of people you are serving
start by boiling water and starting the pasta. sautee the shrimp in olive oil with a little bit of garlic. while that’s cooking, drain the pasta and put into a large bowl. add the tomatoes and olives to the shrimp and cook for just a minute. pour the shrimp mixture into the spaghetti and add the feta. mix all together and serve in pasta bowls. no need for additional cheese!
this is a perfect summer dish.
