ok you are probably thinking to yourself “this girl has written about how to make a chicken-bacon-tomato grilled cheese sandwich, italian stew, chili… and how she’s resorting to nachos?!” but i’ll be honest: i’m tired, i’m cranky, i’m hungry, and i had nachos for dinner last night so they’re on my mind. plus, there is more to nachos than throwing tortilla chips on a plate, topping it with cheese and letting it melt. no sirree bob, none of them plain nachos for me. these are more like fancy nachos (ok, i can hear you… “hahahaha… fannnnncy nachos. there’s no such thing“).
well hear me out.
recipe: fancy nachos
tortilla chips
shredded cheese (mexican, cheddar, pepper jack, whatever you like)
homemade salsa (if possible. if not, store bought will do)
guacamole (again, homemade preferred)
chicken, diced and cooked with a cajun seasoning. trust me.
jalapenos, peppadews, other spicy peppery things
put a thin layer of tortilla chips on a microwaveable AND oven safe plate. spread a thin layer of shredded cheese on top and put in the microwave for 45 seconds. take it out and add another layer of chips and another layer of cheese. add your peppers and put under the broiler for 1 minute – just enough to let the cheese melt and brown. pull it out (carefully – it’s hot!) and put your cajun seasoned chicken on top. put a dollop of guac on top, some salsa in a bowl and enjoy.
