last may, while i was in reykjavik, i decided to go for a long walk along the harbour and then head to a grocery store to pick up dinner-making supplies. stupidly, i had not looked in the kitchen to see what they had in the way of cooking utensils.
so i wandered through the massive store, picking up random foodstuffs, seeing what was what, and then i opted for a pizza. they had a decent pre-made crust, some good smoked salmon (it’s iceland!), and an okay selection of cheese. it was enough, and it was cheap. i picked up a bottle of wine, and i was set. unfortunately, when i went to make my pizza, i had one big drawback: there was no pizza pan or cookie sheet, or even an oven. what’s a girl to do? grab the nearest cast iron frying pan and make it work.
and let me tell you, it worked. oh, it was so good. it was an amazing pizza. and i make a lot of pizza (it’s cheap.) i have no recipe for you, if you really want one, read the one about goat cheese and pesto pizza. i’m just here to brag that i can make a pizza in a frying pan. and you can too.
